Pistachio Pecan Trail Bars

These pistachio pecan trail bars are not too sweet, not too crunchy. They are just right! I am heading away for the weekend for a tournament with my daughter and thought that bringing a good, wholesome snack would be a good idea since finding healthy things to eat when on the road is often a challenge. This combination of ingredients came to mind and, luckily, my recipe was a success at the first try! This bar is packed with protein from the oats and all the nuts and, most importantly, packed with flavor. Give this recipe a try for an on the go snack and let me know how they turn out!

Ingredients:
⅓ cup raw, shelled pistachios
⅔ cup raw pecans
¼ cup hemp seeds
½ cup dried cherries (chopped)
½ cup oat flour
1 cup oats
1 tsp. Kosher salt
1 tsp. Cinnamon
¼ cup maple syrup
¼ cup creamy cashew butter
1 egg white

Instructions:

Preheat oven to 375 degrees. Puree ½ cup oats in a food processor to create oat flour and pour in a bowl with 1 cup rolled oats. Toast the pistachios and pecans slightly in a skillet and then pulse the nuts in a food processor. Combine all of the ingredients and mix well. Line a baking tin with enough parchment paper that there is excess that reaches the top of your baking dish. This will make it easier to remove the trail bars after baking/cooling.  (I used an 8×12 baking dish but you could also use an 8×8.) Spread batter in an even layer in the baking dish and bake for 17 mins. Let cool completely. Lift parchment paper and place the baked mixture on a cutting board or your counter. Use a large knife to slice the bars into squares or long bars. Bars should keep for about 1 week. You could also freeze them or keep them in the refrigerator to extend shelf life. The number of bars will depend how you decide to cut them. Enjoy!
